What We Ate...

As Thursday roles into town, my Friday, I reflect on what the week has thrown at us. We have eaten some fun food. Here is a peek at what we have eaten:

We hope that this week will end quietly because we have seem to have come down with a fall cold. I am not sure if this is a cold induced by weather or kids from school. However, a quiet weekend will surely bring our health back to 100%.

Who knew a hole could be a good thing!

Donut holes remind me of fall but I can never bring myself to buy donuts at the store. For one, they are unhealthy and I hate when they get stale. However, last night I found a recipe for donuts in a Cooking Light magazine.

This weeks shopping experience left us feeling a little Spartan so, we decided to try the donuts (Donuts always round out a refrigerator of food). I am happy to announce, donuts are a cinch! Making the dough, in my mixer, was easy and the it required some rising time.

After punching it down, we broke it into small balls and even tried s few rings. They boiled for a few minutes and then rolled in sugar. Right off the stove, delicious!!




This morning, I was making lunch and decided to put a few donuts in...but, they were a little soggy. I was nothing but disappointed. So, I quicky created a glaze to revamp the balls of dough.

For today, they'll be OK but, next time I make donuts I will make sure to eat them in the moment.Nothing is quite a good a day later, minus chili.

The other Big D(R)...

Before embarking on our Honeymoon, a family friend commented, "The Dominican Republic is beautiful, just don't head to far West!". It took a moment to understand their reference. Because sharing the same island is Haiti. Hearing much about the devastation of Haiti from the earthquake in January of 2010, it was surprising to find Punta Cana in tact. The beaches were pristine, clear blue water lapped at the shore, and the Dominican people always seemed to be singing. It was a wonderful week to reconnect with my husband and learn a few new things about him. 
 During our week we managed to get A LOT of sun, participate in Snubadiving, and suspend above the jungle by Zip-Lining. And, let me tell you it was a BLAST. Sunba Diving is a combination of snorkeling and SCUBA. You are weighted down with a weight belt and have a regulator but do not have a BCD and your air tank floats at the surface on a raft. We were at a 20-30FT depth and were able to spend 45 minutes on the bottom.



 Zip-Lining was reached by a 90 minute Chiva ride up and down two track roads. When we reached the Finca we were given a 10 minute safety sch-peal, harnessed up, and marched to the first tower. The carribeaner that  hooked your body to the zip line was secured and then you jumped! Each line was a different distance with the longest being 3/4 of a mile. It definitely brought a scream to your mouth!


 Our last night we were able to eat at The Don Pablo, the elite restaurant at the resort. It was a delicious meal to end the week. By now we have lost our tans and we are pulling out the jeans and sweaters. But, it was a wonderful experience that will, hopefully, become a yearly event, traveling that is!

Quite a hiatus....but we are back

Much has happened since our last post. Here is a breif list:

- We experienced the Dominican Republic
- Dale and I enlisted help to move across town
- Halley celebrated her Golden Birthday and the big 25
- We have experienced Aldi
- Dale raced in his first drag race
- Halley is back to her ways, cookin' up a storm
- Our furniture will soon be reupholstered
- Thank-You notes are 75% of the way done
- Halley officially changed her name


In the next few post, minus the weekly menus that will be posted, I will delve into detail about each of these new, fun, exciting new experiences as a married couple.
